Bacon is a cured meat procured from a pig. Fresh bacon may then be further dried for weeks or months in cold air, boiled, or smoked. We smoke the bacon using different types of wood chips or sawdust for different flavors. For instance, applewood will give the bacon a mild, fruity flavor.
